If there is one thing that sucks about being me, it’s that I cannot eat chocolate.
I have a metabolic intolerance to it, which is like an allergy but, uh, messier (trying not to be gross here—just take my word for it). This is important to know because my intolerance increased as I aged, so I know exactly how amazingly delicious and wonderful all things chocolate are.
Like S’Mores.
Every single time I smell a campfire a little part of my brain from the 70’s and 80’s excitedly claps her hands, shouting, “Yay! It’s time for S’Mores!” and then the rest of my brain rocks in a corner weeping because it remembers my chocolate allergy.
BUT NOT ANYMORE.
I would try to make do with melty marshmallows on graham crackers, but let’s be honest: NOPE. Not the same.
So I’ve been playing around, and I have a couple easy S’Mores recipes for those of you who want to try something a little different this time around.
Oh—and you don’t need a grill or fire pit to roast marshmallows! I do them on the gas stovetop year-round or when I forget to refill the grill’s gas tank because holy cow I never remember to refill that thing.
BASIC NON-CHOCOLATE S’MORES
Easy enough to be done by the campfire with kids tripping all over you drunk on sunshine and summer freedom.
Ingredients
Really good old fashioned graham crackers (I am partial to the cinnamon ones by Trader Joe’s)
Peanut butter
Jumbo marshmallows
Directions:
1. On the non-cinnamony side of the graham cracker, spread some peanut butter.
2. Roast your jumbo marshmallow as normal, plop that melty bugger onto the peanut buttered side of one graham cracker and top it with the cinnamony side of another into a sandwich.
3. Shove it in your mouth and taste the happiness.
OR you can…switch out the peanut butter and use Nutella, instead. Or maybe even do the peanut butter and the chocolate. Go crazy!
S’MORES FOR PARTIES
I often make these one at a time for treats, but you can also make a bunch at once for guests. Or a bunch for yourself. Whatever you’re in the mood for. I am not here to judge.
Ingredients:
Mini graham cracker pie crusts
Peanut butter chips
Butterscotch chips
Jumbo marshmallows
Directions:
1. Mix together equal parts peanut butter chips and butterscotch chips in a bowl—enough to fill the bottom of the pie crust(s) just 1-2 chips deep.
2. If this is a small batch, melt them in your microwave. If it is a large batch, do it slowly on the stovetop
3. Pour the melted awesomeness into the bottom of your pie crust(s).
4. Roast your marshmallow as usual and drop that heavenly piece of fluffy sugar on top of the golden melty goodness.
5. While it can be eaten with your hands, I prefer to use a spoon.

Okay, so now you have zero reasons to not eat S’Mores if you are one of the unlucky few who can’t eat chocolate or like to switch it up every once in a while and avoid chocolate in your summertime treats. You’re welcome.
