Sometimes when I get a headache, I like to bake something sweet and hearty for myself. This weekend was full of icky head pain, and I happened to have some peaches on hand, so I went to work on a sweet, delicious remedy.
This creation was born from my mom’s old apple cobbler recipe, plus some ingredient ideas from other cobbler recipes I found in various cookbooks and online.
It came out so very very damn delicious.
I used a mixture of regular and white peaches, real maple syrup, and light brown sugar, but I believe that all recipes are flexible. I have a hard time following any recipe straight-up, so feel free to play with mine to make it something you love. Heck, use apples or pears instead of peaches, maybe toss in some berries, too. Mmmm…

Maple Brown Sugar Peach Cobbler
INGREDIENTS
1 cup Old Fashioned Oats
1 cup brown sugar
½ cup flour
1 TBS cinnamon
½ tsp salt
¾ cup butter, cubed
7-8 peaches
1/3 cup real maple syrup
1 TBS vanilla
INSTRUCTIONS
- Preheat oven to 350°F.
- Slice each peach into 8 segments, leaving on the skin, but removing the pit.
- Combine the maple syrup and vanilla in a large bowl.
- Toss the peach slices in the syrup mixture, coating well.
- Spray a 9×13” baking dish with non-stick spray.
- Pour the coated peach slices into the backing dish.
- Rinse out and dry the large bowl.
- Combine oats, brown sugar, flour, cinnamon, and salt in the large bowl.
- Add chopped butter to the mixture and massage it into crumbles with your hands until it is all combined, with no more loose dry bits.
- Sprinkle crumbled mixture over the fruit, letting some fall into the cracks between them.
- Bake for 35-45 minutes, until the crumble topping browns and there is liquid bubbling in the bottom of the dish.
- Remove from oven when done, then use a large spoon to push aside the cobbler and scoop up the liquid at the bottom of the dish to drizzle it all over the top.
Serve warm as-is, or topped with ice cream or homemade whipped cream.
I almost want to say it’s even better the next day when the peaches have had time to soak up all that juicy stuff. I reheat servings in the microwave. So easy, so good.
